Don Jacinto

Rooted in Community. Grown with Purpose.

Don Jacinto is a proud member of Nueva Alicia, an indigenous Mam community in the highlands of Chiapas whose deep cultural roots and remarkable resilience have shaped the way coffee is grown and shared here for generations. Of Mayan descent, he brings that heritage into everything he does — from how he tends his land in the neighboring region of Belisario Domínguez, to how he leads the people around him.

"Fair wages, sustainable practices, and long-term stability — not just for one farm, but for all of us."

Since 2004, Don Jacinto has dedicated himself to producing and roasting high-quality Robusta coffee, combining traditional Mam farming knowledge with refined expertise developed over two decades of practice. The climate and terrain of Belisario Domínguez give his beans a distinctive character — and his commitment to doing the work properly, from cultivation through roasting, ensures that character makes it into every cup.

But Don Jacinto's impact extends well beyond his own land. As a respected leader in Nueva Alicia, he heads a cooperative of more than 30 member farmers, working alongside regional unions to ensure fair wages, sustainable practices, and long-term economic stability for everyone in the group. He understands that a single farm can produce great coffee, but an organized community can build something that lasts.

How He Farms

  • Cultivates and roasts Robusta coffee in Belisario Domínguez, Chiapas

  • Has produced high-quality coffee since 2004, combining traditional methods with decades of refined expertise

  • Leads a cooperative of 30+ farmers in Nueva Alicia, coordinating with regional unions for fair pricing and sustainable practices

  • Grows a variety of exotic fruits alongside coffee, supporting biodiversity and diversifying community income

  • Farming is rooted in indigenous Mam tradition, prioritizing long-term land stewardship over short-term yield

Don Jacinto represents something CraterHouse was built around — the idea that great coffee and a thriving community aren't separate goals. On his land, they're the same thing.
